Favorite Pumpkin Recipes (2024)

Hello Everyone!

With the fall season practically halfway done and Halloweenalmost here, I thought I would share some of my favorite pumpkin and pumpkinflavored foods – you know, because I’m you’re “basic white girl” after all.

I’ve said in another post that usually during fall I drinkpumpkin flavored coffee in during the fall mornings. Since some of my food choicesare breakfast foods, those are the times I’ll drink regular coffee because evenI have limits to how much is too much pumpkin flavor being consumed.

All of my recipes came from Pinterest and I’ll link each one.I try to have at least one new pumpkin flavored recipe every year to try butsince my husband absolutely hates pumpkin flavored anything, I stick to mainlybreakfast foods because he hardly ever eats breakfast. Here are five of my recentlyfavorited recipes!

Pumpkin Pie Overnight Oats

I like trying new ways to eat overnight oats. They’re quickto make and easy to grab and leave in the mornings when I have to get myselfand two kids ready to go early in the mornings. This pumpkin pie overnight oatsrecipe is perfect for fall. My kids don’t eat breakfast with me because it’stoo early for them and they go back to sleep at their grandmas after I tuckthem back in, but they do enjoy this on the weekends I know I’m not going towant to cook anything.

Chocolate Chip Pumpkin Bread

I tried this recipe while I was pregnant with my seconddaughter. I craved chocolate most of that pregnancy. I wanted something pumpkinflavored, but I also really wanted chocolate. So, when I saw this, I knew rightaway that I had to have some. This circles back to my husband hating pumpkinflavored foods because I had made tons of banana bread during my pregnancy so whenhe saw the bread, he immediately thought it was chocolate chip banana bread andtook a big bite of it. Needless to say, I got in a good laugh and he drankwhatever he could find to rinse the taste of pumpkin out. My oldest daughter andI love it and it’s a nice little treat to have as a snack or after dinner.

Roasted PumpkinSeeds

The great thing about roasting pumpkin seeds is they cancook while you finish carving your pumpkins! I usually clean up the guts frominside the pumpkins we’re carving to get everything out of the way. I clean offthe pumpkin seeds, lightly salt them and throw them in the oven. There are ofcourse multiple ways to season pumpkin seeds if you want to look up otherideas. After they’re in the oven, we go back to carving pumpkins. It works outso that around the time we’re finishing our carvings, the seeds are done. Whilethey’re cooling to an eatable-temperature, we can finish cleaning up the entiremess from pumpkin carving. Timing wise, this works out again because by thetime I’ve got candles lite in the pumpkins, we can enjoy the seeds and have agood look at our work.

Pumpkin Coffee Cake

I remember a few times on the weekends when my mom wouldmake coffee cake for us to enjoy on the weekends. It’s a fast and simplebreakfast to make. Now that I’m older, I like to add my own twists to thingsthat bring back memories. Pumpkin coffee cake is a great treat during the fallseason that I know if my mom had known about when I was younger, she would haveprobably made some. I’ve only made it a couple times, but it’s a yummybreakfast that I know I’ll enjoy for years to come.

Pumpkin French Toast Casserole

This was one recipe that I found while scrolling through my homepageon Pinterest one year when I had this obsession with breakfast casseroles. I haven’tmade it this year, but when I made it last year and the year before, my oldest daughterand I both enjoyed it. It was a bit sticky and messy for me to have when I goto work which is what I was going for at the time, but this casserole workswell for satisfying both my fall pumpkin flavored need and a quick weekend breakfastneed.

I feel like pumpkins have always been associated with falland not just Halloween. Kind of like watermelons and summer or candy canes andwinter. But I’ve always enjoyed having new pumpkin flavored recipes to try everyyear, even before it became a trend to do so.
